A Legume a Day Channel Description Snapshot
Channel Description
Hello, I’m Chelsea. A bit about me: I have a PhD in Nutrition from Colorado State University. My doctoral research focused on legumes (pulses, in particular) and outreach. Essentially, in my research and other work, I take a translational research approach to help people eat more beans so that they can reap all the amazing benefits beans can offer for human and environmental health. I also love to cook – and eat! – and want to share some of my favorite recipes here, on A Legume a Day: https://alegumeaday.com/
Plus, I want to share some of the incredible behind-the-scenes happenings of Bean World. This includes bean research, cuisines from around the world that I see on bean travels, glimpses into the field from visits with farmers, and more. I also provide updates on the science of beans – not clickbait, but accessible, brief summaries of what the scientific literature really has to say. Together, let’s explore the many delicious ways to enjoy beans/pulses!
